"THE OLD IS GOLD" - JAGGERY (Post : J- 1 )

Jaggery was once an essential item in every kitchen of ancient India when Sugar was unknown to the world.


It was used as a sweetener in daily food preparation and also to make various sweet dishes.


Even today, it is used in the preparation of some Ayurvedic medicines.

In early days it was made with manual labor and traditional method as Cottage Industry, so apparently, the production process lacked quality, purity and hygiene standards. So Jaggery lost its importance as a sweetener amongst the new generation on arrival of the new product White Sugar.


Once again Jaggery is back in demand and proved the proverb "old is gold". And the good news is, now it is produced in India under most hygienic conditions using modern technology.
